Healthy oat bars recipe

These healthy oat bars are the perfect grab and go bite, are really easy to make and are refined sugar free – hurrah! I like to grab one of these to give me an energy boost if I’m rushing off to the gym after work, or you can easily pop a couple into a small air-tight container to take into the office and munch between meetings.

You will need:

2 large spoonfuls of Meridian cashew butter

3tbsp Groovy Food agave nectar

1 apple (peeled and grated)

2 bananas (mashed)

8tbsp porridge oats

A handful each of pumpkin seeds, sunflower seeds, flaked almonds raisins

One tbsp milled flaxseeds

Coconut oil


What to do:

  1. Heat your oven to 160C/140C fan/gas 3. Line a 20cm square tin with baking paper and grease with a little coconut oil.
  2. Heat the cashew butter and agave nectar in a small pan until melted. Add the mashed banana, apple and 100ml hot water and mix well.
  3. Put the oats, raisins, seeds, almonds and flaxseeds into a mixing bowl. Pour the contents of the pan on top and stir until everything is coated.
  4. Tip into the cake tin and bake for 45-55 mins until golden. Leave to cool in the tin and cut into 12 pieces to nibble on when you please.
