I made these little breakfast bites for the first time a couple of weeks ago and have fast discovered that they are the perfect thing to have hanging around in the fridge. They’re great for taking to work or just as a little something to nibble in-between meals when you find yourself looking in the cupboards for a snack.
Breakfast bites are basically mini omelettes and can be altered to suit any taste using all sorts of different fillings. In this particular recipe I’ve used red pepper, feta and mushrooms, but they also work using ingredients like chopped up turkey slices, spinach and tomatoes. I’ll keep trying different combos and will report back on my favourite.
To make breakfast bites, follow these steps…
You will need:
Salt and pepper to season
What to do:
- Heat the oven to 200C.
- Crack the eggs into a bowl and whisk with a fork.
- Chop up your pepper and mushrooms into small pieces and mix in, crumbling the feta in too.
- Add your salt and pepper and spoon into silicone cupcake cases.
- Bake in the oven for approx 15 minutes, take out and cool.
I made 8 bites in this batch, so you can increase your ingredients if you want to make more.
